also share some of the exciting
initiatives we have in store for you in 2019.
We are eagerly awaiting the first three of
our 10 Boeing 787 Dreamliners, with aircraft
#1 arriving this month. After flying these
new planes within Canada, they will then fly
between Calgary and Paris, London and Dublin
non-stop, beginning later in the spring.
Our planes offer 320 seats in three distinct
cabins: Business, Premium and Economy.
Our Business cabin consists of 16 lie-flat
seats, offering exceptional privacy, spaciousness and comfort. Our Premium cabin is
the ideal combination of comfort and value,
where guests will enjoy extra space, larger
seats and a self-serve social area. Our enhanced Economy cabin still offers WestJet’s
traditional value punch with comfortable

WestJet will also launch new non-stop service between Toronto and Barcelona in May

reconfigure our 737 fleet with our two-by-two
seating in Premium, roll out the features of the
new Platinum tier of WestJet Rewards, and

ne of the features I look forward to is our annual round-up
of must-visit destinations—a
list designed to inspire your
next vacation in the months ahead. This year,
our editorial team put a spin on our usual format
by using the alphabet as a guide. In A to Z: 26
Reasons to Travel (page 35) we journey across
the WestJet universe and bring you the hottest
destinations and newest trends.
The feature also provides us with an opportunity to write about some of the amazing and
curious experiences we’ve had over the last few
months while working on stories for the magazine. My visit to The Stanley Hotel in Colorado’s
Estes Park falls squarely into the latter.
During a tour of the hotel, I was able to explore hidden and off-limits corners of this historic
property, and also stopped by the infamous Room
217—where author Stephen King was inspired to
write The Shining. As our guide was telling the
story of the night King stayed at the hotel in 1974,
the door to the room swung open revealing two
identical twin girls. Mirroring a scene from Stanley
Kubrick’s movie, the duo greeted us with a creepy,
“come play with us.” The twins were staying at

the hotel with their parents on a visit from Peoria,
Ariz., and had speciically requested this room.
It’s experiences like these that make me love
to travel, and I’m looking forward to sharing more
from my experiences in Colorado in a later issue.
For now, I hope our A to Z feature inspires you to
book your own adventure in 2019 and experience
the joys travel can bring.

us who suffer from inlammation, joint pain,
and stiffness, taking that run, or that trip,
can become a real challenge.

Inlammation in the body can lead to a
host of uncomfortable or painful problems
including arthritis, psoriasis, diabetes and
more. One way to help reduce inlammation
is by enjoying a healthy diet rich in
antioxidants (think ish, whole grains, and
healthy fats). Another way is to keep moving.

snap photos of the colourful murals created by
local artists. Stop for a coffee and French toast,
in the garden of the Fleur de Marie Eatery.
Afternoon: Drive 40 minutes west to Playa Porto
Mari (4), a pristine white-sand beach that was
used as a backdrop in the 2017 Sports Illustrated
swimsuit edition. Snorkel in the turquoise
waters along its double reef, hike one of the
area’s three trails, or simply lounge on the beach
and bite into a Williburger—a goat meat patty
topped with cheese—from the restaurant on
the beach.
Evening: Dine on Caribbean specialties, such as
Cuban banana soup, at Restaurant De Gouverneur in Willemstad. Be sure to ask for a balcony
table so you can enjoy the view of the brightly
lit buildings in the Punda neighbourhood across

With so much time spent sitting in airports
and on planes, travelling can sometimes
throw us off our itness goals. Some simple
ways to keep muscles and joints engaged
while you’re on the go include neck, shoulder
and ankle rolls as well as calf raises, forward
bends, and other unobtrusive but helpful
stretches. A quick stroll up and down the
aisle when it’s safe to do so is also a great
way to enjoy a healthier, happier light.
If occasional joint pain and stiffness are
getting in the way of physical activity,
consider adding Sisu No. 7 to your travel
itinerary. Combining seven bio-active

home to half the world’s oysters. Author
Mark Kurlansky, who details New York’s
history of mollusks in The Big Oyster,
explains that, for more than a hundred years, the city produced the best
anywhere—a title it wants to regain.

half-shell is a highlight, but seasoned
chefs and volunteers whip up a variety of
oyster-centric dishes as well.
Further east on Long Island is the North
Fork region, where the maritime village of
Greenport is situated. For two decades,
Widow’s Hole Oyster Farm has produced
oysters in Greenport Harbor, delivering
them to New York restaurants.
BRINGING THEM BACK
tep aside pizza and bagels, oysters were once
recognized as the quintessential New York
food. In the early 1900s, New York Harbor held
220,000 acres of oyster reefs, with more than
1 billion oysters coming out of the water annually. That is
until contamination and overishing put an end to the Hudson
River’s stockpile of these delicate bivalves. Enter the Billion
Oyster Project (BOP)—an organization venturing to reverse
the damage and harvest oysters in the harbour. Since 2014, the
initiative has planted 26 million oysters and recycled 1 million
pounds of shells through a partnership with more than 70 New
York City eateries. BOP aims to restore at least 1 billion oysters
to the harbour by 2035, enabling the city to regain its status as
the world’s oyster capital.

Beginning a little more than half a kilometre from Manhattan and reaching as far as
the Atlantic Ocean, Long Island remains
one of the top-producing oyster regions
on the Eastern Seaboard. The iconic Blue
Point Oyster originated here and still
thrives. New York State took these oysters so seriously, it passed a law in 1908
to protect the name. Blue Points must be
grown in Great South Bay water and live
there for at least three months.
On the North Shore of the island,
Oyster Bay represents more than a Billy
Joel song or the site of his multi-milliondollar mansion. In the 1600s, the Dutch
settled here and named the hamlet after
the water’s wealth of shellish.

In the United States, Route 66 was the “Mother Road” that took travellers
west to adventure and opportunity. In Canada, the “Powder Highway” is
the artery that leads the intrepid into B.C.’s mountainous interior to turn
their ski dreams into reality. More than just one road, this collection of
connected highways circles from the Rocky Mountains in the east, through
the Purcell, Selkirk and Monashee mountains in the west, to pass through
a vast, snowy realm known as the Kootenays.
The Powder Highway encompasses almost three million hectares of
accessible terrain and receives an average of 18 metres of deep, dry snow
each season. It includes eight alpine resorts offering up a variety of experiences, from the beginner-friendly, community vibe at Fairmont Hot Springs
Resort to the province’s longest vertical and gnarliest pitches at Revelstoke
Mountain Resort. It also attracts pow-hounds looking to push their limits
in nature’s winter bounty. There are multiple opportunities for heli-skiing
and cat skiing, and explorers with backcountry know-how and avalanche
training can climb up to remote huts and lodges.
Cross-country skiers seek out the Powder Highway, too, and make
tracks to 16 Nordic clubs and resorts spread between Field in the northeast and Rossland in the southwest. In all, more than 100 options await
skiers and snowboarders—the highest concentration in the country. Après
ski, there are almost as many ways to relax, between natural hot springs,
luxurious spas, and a selection of breweries, cideries and distilleries
offering liquid relief.
It’s easier to access the Powder Highway this winter, thanks to new
WestJet service from Calgary to Cranbrook three times a week. After

structure, the queen of Paris’ skyline,
but the Eiffel Tower wasn’t popular
when she was irst conceived. Built by French
engineer Gustave Eiffel, the wrought-iron tower
was meant to be a temporary structure during the 1889 World’s Fair, but throughout that
summer the public became enchanted. As we
celebrate its 130th anniversary this March, here
are a few towering facts. —DL
HEIGHT
At 300 metres, it was the world’s
tallest structure when it was built
until the Chrysler Building opened
in New York City in 1930. Antennas
were later added to the Eiffel Tower,
making it 324-metres tall.
WEIGHT
The complete tower was put
together using 2.5 million rivets
joining 18,038 iron parts and
weighs 10,100 tonnes—that’s
the same weight as nearly
660 million macarons.
THE TOP
The highest level is home to
a two-storey observation space—
one inside and one outside—a

Hotel, it’s easy to
understand how it
inspired popular
horror writer Stephen
King to pen his 1977
masterpiece, The
Shining. This 1909
Colonial Revival building
in Estes Park is considered one
of the world’s most-haunted hotels.
Guests complain of an eerie feeling inside the
wood-clad walls of the billiard room, where the
star-spangled banner hangs above the fireplace.
Take a closer look, and you might see the face
the hotel’s original owner, Freelan Stanley,
in the top right-hand corner. His wife, Flora,
can often be heard playing the piano in the
ballroom. While on the fourth floor, you might
encounter the apparition of the friendly cowboy
in Room 428, or experience the closet door in
Room 401 open, then slam shut on its own.
Guests on the fourth floor have been
known to call the front desk reporting the
sound of children running, balls bouncing and
halls filled with laughter. Undoubtedly, the
most paranormally popular room is the now
infamous 217—the room King stayed in—where
the spirit of a former housekeeper apparently
hangs out, turning the lights on and off and
dutifully unpacking the bags of guests. Some
blame the hotel’s high paranormal activity on
collective hysteria, the quartz, magnetite and
limestone in the earth beneath the site, or,
simply, spirits who have yet to check out. —DB

House numbers are a modern import
to this archipelago of 12 islands in the
Gulf of Saint Lawrence. For years,
it was the colour of the houses, each with a
unique body and trim combination, that helped
fisherman at sea know where to drop their nets,
and how locals would explain where they live:

Islanders have been known to agonize over
their paint chips for months, trying to avoid
painting their homes the same colours as a
neighbour—no one would intentionally offend
one of his or her 12,322 fellow islanders.
Located a five-hour ferry ride from Souris,
P.E.I., Les Îles de la Madeleine is a popular
escape for Quebecers, with an increasing
number of visitors arriving from the Maritimes,
Ontario and the United States. The 74,000
tourists, who mostly come between late spring
and early fall, are there for the pastoral beauty
of its rolling hills and red-sand cliffs, stunning
beaches, incredible kiteboarding conditions and
unobstructed, nightly views of the stars.
The islands’ biggest attraction, though, is its
friendly residents, the majority of whom are
descended from the original French, Acadian
and Scottish settlers who came in the 1700s and
1800s. While opportunities on the islands are
few, members of the younger generations are
choosing to remain and taking over traditional

Recently rejuvenated, this ribbon of once-polluted water runs from Lake Saint-Louis to the Port of Montreal.
The nearly 200-year-old canal is edged by biking and

and take a ride on the gentle stretch of water between two of

“Every Sofar is a different
experience, and it’s a great way
to check out different cities,”
says Chou, who invites visitors to
Calgary she meets to the gigs.
“When you apply, there is a
comments section you can fill
out and people visiting will say,
‘I want to check it out.’ I have spoken to some of the other North
American city leaders, and when
they see something like that, they
invite them.
“It’s usually [locals] who go to
Sofar shows, so it is easy to meet
someone, and maybe hang out or
get shown around the city after,”

Sofar Sounds est présent dans
plus de 400 villes dans le monde,
de New York à Toronto en pas-
sant par Londres et London. La
fréquence des spectacles et le type
de salle varient dans chaque ville; les

salon comme dans une usine, mais
tous y assistent pour apprécier la
musique en concert.

j’aimerais voir ça”. J’ai parlé à d’autres

villes et quand ils voient ce genre de
commentaire, ils les invitent.
« Habituellement, ce sont les
habitants de la ville qui vont aux
concerts Sofar, alors c’est facile de
rencontrer des gens et peut-être de
se faire offrir une visite guidée de la
ville », dit Chou.

she was used to hearing in bars,
the audience at this music performance was listening intently.
“It was cool that everyone was
quiet,” says Chou. “Going to the
bar, it’s always so loud, and I can’t
hear the music.”
Chou is now the city leader for
Sofar Sounds Calgary, a group
that organizes monthly, secret
music shows around the city.
Taking place in non-traditional
venues, these gigs are for people
who appreciate live music.
“The intent is to have fun, listen
to music and make new friends,”
she says. “Even though they don’t
know who is going to be playing
in advance, everyone is focused
on the music.”
Sofar Sounds operates in more
than 400 cities around the world,
from New York City and Toronto
to London (both England and
Ontario). The frequency of shows
and type of venues—performances take place anywhere from
living rooms to factories—differ
in each city, but what unites them
is an appreciation of live music.
Invites are based on a lottery
system. Once you have signed up
on Sofar Sounds’ website, you’ll
receive email notifications for
upcoming shows in your specific
city—the location and artist are
kept a secret—and once a date is
announced you apply to attend.

It was 50 years ago this June that
New York City’s Stonewall Inn was
cemented as an icon of LGBTQ+
history in the United States. After repeated
raids on the Stonewall Inn—one of the city’s
only gay bars at the time—by the New York
City Police Department, a riot broke out that
would lead to widespread activism within the
community for equal rights. To mark the anniversary, New York City is hosting this year’s
WorldPride—a biennial celebration that began
in Rome in 2000. Events will be held all over
the city, including at the Stonewall National
Monument, which was established by former
president Barack Obama in 2016. As the first
American city to host WorldPride, the event
is expected to attract more than 3 million
visitors throughout June and will include a
film festival, human rights conference and the
annual Pride March on June 30. —DL

Coast Highway—runs about 1,050
kilometres from San Francisco to Los
Angeles. Its incredible Paciic views and place in
popular culture has made it the site of epic road

the highway was destroyed after a landslide in
May 2017, making access to towns, such as Big Sur,
dificult or, in some cases, impossible. Last July,
after 14 months of work, the highway fully reopened and the area is welcoming visitors. —SS

easy to see the perks:
going solo means you can do
exactly what you want, when you
want, and you’re more likely to engage with
locals and fellow travellers. But, with the high
cost of hotel rooms and single-supplement

Luckily, the industry is catching on and
many companies are starting to cater to solo
travellers. Hotels across the UK and Europe
offer single rooms—we especially love The
Hoxton, Holborn, for its single-friendly “shoebox” rooms—and resorts in the Caribbean are
hosting “Singles Weeks,” where the singlesupplement fees are waived for certain periods
of time throughout the year.
Plus, there’s plenty of tour companies offering options to solo travellers—in 2018, Intrepid
Travel began running a selection of solo-only
tours (including a new eight-day Cuba itinerary)
in response to the 24-per cent growth in solo
bookings the company experienced in 2017.
And, since Intrepid says about 50 per cent of
all bookings are solo, the company waives its

“Essentially, these guys were
travelling across the land in fairly
adverse conditions, and Caribou
was intended as a food and vitamin
supplement,” says Tieman.
Popular folklore says the drink
was initially a mixture of alcohol and
caribou blood—hence the name—
but this is up for debate. A more
likely explanation is that Indigenous
people mistook the voyageurs’ fortiied wine for Caribou blood. Regardless, the blood legend makes a good
story, and ups the drink’s street cred.
Today, rather than keeping trappers and mappers warm during their
icy journeys, Caribou is associated
with the winter carnival season.
Served in moulded-ice shot glasses,
or toted around in wineskins, it’s
come to symbolize the joie de vivre
possible in Quebec City during its
carnival, which runs Feb. 8 through
17, and during Winnipeg’s Festival du
Voyageur, from Feb. 15 through 24.
It’s not uncommon for families
to make their own recipe at home
by combining whisky with red wine
and spices, such as cinnamon, or by
blending port, brandy, vodka and
sherry before adding maple syrup
to the concoction.
Tieman remains coy about his
company’s exact Caribou ingredients. It always contains full-bodied
red wine, he says, along with a local
grain alcohol, such as alcool (a pure
grain spirit distilled in Quebec) or rye
whisky, plus spices.
“Whether you love it or hate it,
it’s part of Canadian heritage,” says

chilly comprehension is partly why,
each January or February, inhabitants of these cities throw outdoor
parties and embrace the season.
To keep themselves feeling warm
and happy, even when outside for
extended periods, many revellers turn
to Caribou. Part wine, part grain spirit
and part spice, Caribou is a traditional
boozy punch—not unlike mulled
wine, but typically served cold—
which has become a cultural icon.
“It’s a brand that is fundamentally
related to the fur trade,” says Phillip
Tieman of Quebec-based Mondia
Alliance, which produces the country’s only commercially available
version of Caribou.

4 garlic cloves, chopped
1 Tbsp canola oil
2 lbs fresh P.E.I. mussels, rinsed
1 cup white wine
1/2 lb bacon, chopped
1 cup butter
1 large white onion, inely chopped
3/4 cup all-purpose lour
5 to 6 cups ish stock
1 lb potatoes, peeled and diced
3 cups heavy cream
1 lb haddock, cut into bite-sized pieces
250 g cooked lobster meat
250 g bay scallops
1 Tbsp inely chopped fresh tarragon, plus
extra for garnish
Salt and pepper, to taste

In a medium pot, sweat the
garlic in the oil until soft. Add
the mussels and wine and bring to
a boil, covering for two to three
minutes, or until the shells have
been open for about a minute.
(Discard any that haven’t opened.)
Strain, reserving the cooking liquid,
and remove the meat from the
shells once they are cool enough
to handle.

Set a heavy pot over mediumhigh heat and cook the bacon
until crisp; remove with a slotted
spoon, pour off the fat and return
the bacon to the pot. Add the
butter and onion and cook for four
to ive minutes, until translucent.
Reduce heat to low and stir in the
lour. Cook for two minutes, then
add the ish stock in four increments, stirring to combine after
each to prevent lumping.

Add the reserved mussel broth,
reduce the heat to medium
low and add potatoes. Cook for 20
minutes, or until the potatoes are
just tender. Add the cream and bring
to a simmer. Turn off the heat, and
add the scallops and haddock. Cover
and let the ish cook in the pot
with the residual heat for about six
minutes. Add the mussels, lobster
and chopped tarragon. Season
with salt and pepper and top with
extra tarragon.

three-stage icing process. The icing
artists—many have background
in ine arts—start by outlining the
design. The outline is then illed
in with icing and placed back in
the oven to harden. Finally, the
intricate details are added—from
Peter Rabbit’s whiskers to Little
Miss Sunshine’s freckles.
It’s this attention to detail that
has enchanted the public to photograph, taste and gift Biscuiteers’
creations. The company now has
two locations—the Notting Hill
store, which opened in in 2012, and
another in upscale Battersea—and
ships to more than 104 countries.
“We’re creating a world of
thoughtful gifters. One biscuit
at a time,” says Hastings.

Jed St. Louis is one of WestJet's best cabin crew members. He is one of 12 WestJetters chosen
in 2018 for the President’s Circle Award – an award that recognizes the impact of WestJetters

Based in Toronto, Jed has been recognized for his sense of humour and his ability to make
safe, on-time performance a priority. We sat down with Jed after winning the President’s
Circle Award to hear his thoughts on WestJet.
Favourite WestJet destination: I love everywhere we go, but my favourite destination is
home. Home is Toronto. Describe WestJet in three words: Exciting, fresh and fun! What
is one thing that you want to share with our guests? If you have an event you cannot
miss, perhaps going the day before will save you a lot of grief and stress, just in case
something doesn’t go as planned. What is your favourite WestJet value and why?
Safety. Everything at WestJet revolves around safety. It’s the thing that gets me home.
Where do you see WestJet in the future? I see WestJet as a strong, established and
global brand. What other WestJetters say about Jed: His hard work and dedication to

Chinese New Year, Richmond, B.C.
There are plenty of spots to celebrate Chinese
New Year in British Columbia’s lower mainland,
but every year Richmond comes alive for the
holiday. Expect lion and dragon dance performances, lower fairs, gift markets and lots of
traditional Chinese cuisine. Restaurants all over
the city host elaborate feasts with upwards of
10 courses. Many of the events centre around
the Aberdeen Centre, including a countdown
show on Feb. 4 to ring in the Year of the Pig.

Modernism Week, Palm Springs, Calif.
Fans of all things midcentury won’t want to
miss this annual festival of architecture, design,
art and fashion. More than 350 events are
planned during the 11 days celebrating Palm
Springs’ love of this design style, including ilm
screenings, tours, lectures, fashion shows and
live music. A yearly highlight are the tours inside
homes built in the 1940s, ’50s and ’60s, including
the estates of A-listers such as crooner Frank
Sinatra and interior designer Arthur Elrod.
